- Salt and pepper to taste
- The royal ceviche uses raw fish and shellfish, if you want, skip to step 7. If you want to eat it right away, stop at step 6.
- Cook the prawns for 10-15 minutes in salted water until pink. Drain and cut in half and add to the bowl. Mix well, cover with cling film and place in the fridge for an hour.
- Cut raw shrimp and any shellfish or raw fish in half. Make sure raw food is no more than 2 inches wide and no more than 1/2 inch wide.
- Add the raw seafood and mix well until all the seafood is coated in the ceviche juice. Cover with cling film and place in the fridge for 24 hours. To ensure that seafood is cooked with citrus, it will be made opaque.
- You can serve it in a mixing bowl and eat with tortilla chips, or you can use toast crusts, spread a layer of sour cream on the toast crusts, and ceviche on top.
