Instructions for cooking shrimp in red sauce - Mauritian style
- Peel, peel and rinse the skin of the shrimp. Squeeze out excess water or use kitchen towels. Place in a bowl and add the garlic paste, ginger and pepper. Mix well.
- In a frying pan, heat a little oil, add the pickled prawns and fry them on both sides. After about 4 minutes, add the onions and mix well. Add salt to taste or a little more and continue to simmer for a minute or two, then set aside on a plate (note: if you add salt first, the shrimp will drown in the water and lose their juiciness).
- In the same pan add the puree, the tomatoes, a little water and a little oil and mix. Add salt and pepper. Bring to a boil for 3 minutes.
- Optional – you can also add 1 hot pepper and some thyme leaves for flavor
- Check the consistency and add water if necessary. Check the taste and if it is too bitter, you can add sugar. Or, if the tomato flavor is a bit weaker, add a tablespoon or two of tomato sauce. Add the cooked shrimp and simmer for another 5-10 minutes.
- When the shrimp and sauce are boiled. Adjust the texture and flavor to your liking. You can add a few drops of sesame oil, fine ginger threads and a few fresh coriander leaves and mix well. Then turn off the heat, garnish with the remaining coriander leaves, and serve hot with bread or rice.
