  8. 100 ml dry white wine
  9. 1/2 lemon, juice
  10. Boil 200 gr prawns
  11. 1 tablespoon fresh coriander, chopped
  12. sea ​​salt
  13. Black pepper
  14. 1 tablespoon butter

  1. Bring salted water to a boil and cook spaghetti according to directions until al dente, ready for step 5 below. Drain in a colander and add a little butter. Store the paste in 100ml of water when you need it in step 6.
  2. Heat a dry skillet and sauté the chorizo ​​for 2 minutes on each side, until almost golden. It should be cooked but not burnt! Place on absorbent paper to absorb excess fat. keep warm
  3. Add the garlic, chilies, and scallions to the skillet and sauté, stirring occasionally, for 5 minutes or until the scallions are soft.
  4. Add the tomatoes, sugar, and white wine and cook for another 2 minutes, stirring occasionally.
  5. Add coriander and lemon juice. Return the chorizo, add the shrimp and cook, stirring, for 60-90 seconds. Remember that prawns are cooked and only reheated. Taste and add a little pepper if you like.
  6. Add the spaghetti carefully but carefully to cover the pasta. If you see it's dry, add a little bit of sticky paste water, but keep in mind that it's not necessary multiple times. Then serve immediately in a hot pasta dish.
