- 7.5 ml black pepper (about 1/2 teaspoon)
- 10 ml of spices for fish (about 2 tablespoons)
- 5 ml pepper
- 1.25 Fresh Curry Flour (about 1/4 tsp)
- 1 teaspoon vegetable juice
- In 125 ml of boiling water
- 350 ml fresh cream
- 250 ml coconut milk
- 10 ml fish broth
- 30 ml of lemon juice
- 15 ml whole milk (optional)
Steps to make velvet coconut curry soup
- In a saucepan, fry the shrimp in 15 ml coconut oil on low heat for 2-3 minutes until golden brown.
- In a separate bowl, grate the chopped onion until golden brown. On medium heat it takes 5-10 minutes
- Add ginger and garlic and cook on medium heat for 4-5 minutes.
- Add the tomato puree and continue to mix for 2 minutes until the tomatoes are combined.
- Add the shrimp, black pepper, fish seasoning, cold flakes, curry powder, parsley or coriander and stir for 5 minutes until the seasoning is ready.
- Add the vegetable broth to the boiling water and stir until melted, then add to the shrimp curry mixture.
- Add the hot cream and coconut milk and cook for 2-3 minutes, stirring constantly, until the soup is thick.
- When the soup thickens, add the lemon juice and keep stirring. Add fish salt and adjust spices if necessary.
- Reduce the soup until you get the right consistency. If it is too thick, add one tablespoon of milk to leave.
- Serve with sliced parsley and jasmine rice or noodles.
